The major challenge of cleaning poultry slaughterhouses is to ensure all the grease
is removed 100% from the many surfaces. It is also very important to remove all traces of proteins and coatings, such as lime, in order to avoid the build-up of biofilm.
During this process, the combination of proper temperature, proper amount of water and choice of chemistry is critical.
